Roasted Potatoes

Potatoes are an inexpensive and great way to get some decent carbohydrate in your diet. We cook up large batches so they are readily available to add to a meal post workout.


  • 5 pounds red potatoes
  • salt
  • pepper
  • olive oil or coconut oil


  • garlic or garlic powder
  • crushed red pepper flakes
  • onion powder
  • parsley
  • rosemary

Rinse the potatoes. Cut into bite sized pieces. Put into an ovenproof skillet or baking sheet large enough to only have one layer of potatoes. Sprinkle with oil. Toss to coat, then sprinkle with salt and pepper.

You can change this up adding different spices and herbs. Or make several flavors at once by using multiple pans.


Bake at 450 degrees for 20-30 minutes, or until potatoes are easy to poke with a fork. (or until brown and crispy. YUUUMM!)


Make a big batch to use in lunches and dinners throughout the week. Refrigerate up to one week.
