Pot Roast

A pot roast with veggies is a pretty simple all in one meal. With our busy schedules sometimes it's helpful to have one cooking while we go about our day.


  • 3-4 pound beef roast ( look for rump roast, bottom roast, chuck or round)
  • 1 yellow onion, sliced
  • 1 pound carrots, sliced
  • 1 pound red or yellow potatoes, cut in half
  • rosemary
  • salt
  • pepper
  • olive oil

Heat skillet on medium high. Add oil and onion. Brown onions. Remove onions and add oil if needed. Salt and pepper the roast to taste, then put into pan. Brown both sides of roast. Add enough water to go halfway up the pan. Add the onions, potatoes, and carrots. Sprinkle salt and pepper over the top. Garnish with rosemary. Bake in 250 degree oven for 3 hours, until roast has an internal tempature of 180 degrees, or until the roast pulls apart easily with a fork.
